These are such a fun spin off a ice cream sandwiches but let me assure you… they’re so much more yummy and magical!
I love Lucky Charms.
My favorite breakfast when I was little was either mini pancakes, brown sugar cinnamon poptarts, or a HUGE bowl of Lucky Charms. I know. So. much. sugar!! I used to eat my Lucky Charms by eating all the plain cereal first, dodging all the marshmallows so then I am left with spoonful after spoonful of marshmallow goodness! Aka heaven. 🙂
Breakfast looks a little different these days for me, but there is one thing that will never change: I will always love me Lucky Charms! And it was only a matter of time until I made dessert with them. You will adore these ice cream bars!
They are Ice Cream Sandwiches with a colorful little Lucky Charms makeover. These start with vanilla ice cream, then a whole bunch of Lucky Charms cereal gets mixed in, then the ice cream mixture gets sandwiched between a crushed graham cracker coating. Perfection I tell you!
