Happy Monday!! We have family in town and we are running all over squeezing in as much as we can! So I’ll keep this quick. I whipped up these easy, no-bake Peanut Butter Coconut Date Bites over the weekend and they’ll be the perfect thing to snack on this week–actually more like a little treat.
I’ve got a weak spot the size of Texas for peanut butter, so these are just what I need to satisfy my sweet tooth + they’re a perfect snack for kiddos.
Made with just four ingredients…..
Dates, all natural peanut butter (the drippy kind–I use Justin’s), dates, unsweetened coconut and oats! That’s it! Tada. Blend it all up in a blender or food processor and roll it into balls.
These are simply meant to be enjoyed as naturally sweetened treat or snack!

Peanut Butter Coconut Date Bites
Yield 10-12 balls
Ingredients
10 dates
3 tbsps natural peanut butter (drippy like Justin's)
1/2 cup oats
1/3 cup unsweetened shredded coconut flakes
Instructions
Soak the dates in a bowl of warm water for 10 minutes. Drain, and slice the dates in half to remove pits.
Add the dates to a blender or food processor and blend until the dates turn into a sticky paste. Add peanut butter, oats, and coconut and blend again until a sticky dough is formed.
Roll the dough into 1 inch balls. Store in an air-tight container in the fridge for up to a week!
