It’s been a struggle getting back into a groove of healthy eating + exercise after pretty much just eating everything I wanted over spring break and Easter. I just let go. And it felt so good to do that. But now….I’m trying to reign it back in and I’m struggling to do it. Been there??
I’ve been to the gym every day this week but my workouts just feel “blah.” And because I ate so much sugar last week I’m craving it even more this week. And I keep finding the leftover Cadbury eggs in that secret spot I keep hiding them (thought
out of site out of mind” would actually work? never.) Anyways, today’s a new day + we always make better choices today than we did yesterday. Replace that easter candy with one of these Peanut Butter Dark Chocolate Hemp Seed Power Balls!!
They’re made with oats, honey, this PbFit peanut powder (that I use ALL the time), vanilla protein powder, a little water, and these Dark Chocolate Covered Hemp Seeds! They’re the secret ingredient giving them that touch of chocolate needed plus adding a little crunch! I’m obsessed! Plus hemp seeds are a superfood that can help improve metabolism, improve digestion, and even help balance hormones. I found my chocolate covered hemp seeds at the specialty health foods section at my grocery store, but I’m certain you can find them at any health foods store, or just use amazon.
One thing I did differently this time with these power balls, was grind up some of the oats first. I loved the texture it created–more like a cookie dough ball.
Peanut Butter Dark Chocolate Hemp Seed Power Balls
Yield 18-20 balls
Ingredients
1 1/2 cup oats
1/3 cup honey
1/4 cup vanilla protein powder
1/4 cup PB Fit peanut butter powder
4-5 tbsp water
1/4 cup dark chocolate covered hemp seeds
Instructions
Place 1 cup of oats in a food processor and pulse until ground up a little bit. Place the oats, along with 1/2 cup of the regular oats in the bowl of a kitchen aid stand mixer.
Add honey, Pbfit peanut butter powder, protein powder and start to slowly mix on low speed. Add one tablespoon of water a time (4-5) or until you reach a thick cookie "dough" like consistency.
Stir in the chocolate covered hemp seeds by hand. Roll into one inch balls and store in the refrigerator.
