This weekend felt likes summer. Warm weather, the beach, buzz cuts for the boys, watermelon, salads, and late bedtimes. All gooood signs of summer. But the boys still have three weeks of school #sooverit
And aside from Graham randomly puking at Costco, it was a great weekend. Yesterday we kind of did a do-over for Mother’s Day dinner and had the best tri-tip with this Strawberry Pistacho Green Cabbage Salad–aka the salad I will be eating on repeat all summer long.
There’s just something about the crunchiness of it I LOVE. And a super simple vinaigrette made of just olive oil, red wine vinegar, rice vinegar, and salt and pepper. You know simple is the name of my game when it comes to food. And salads can be soooo flavorful with theeeee most simple of dressings (sometimes even no dressing!)
I bought a bag of shredded green cabbage from Trader Joe’s and just chopped up even more. You guys, short-cuts. USE THEM. Ain’t nobody got time for washing and peeling and shredding a whole head of cabbage. The whole salad could be made in the time it would take just to do that.
I live for the toppings in this salad- just strawberries, pistachios, avocado and feta cheese. The pistachios are seriously the cherry on top! If you try it, I wanna know. I’m already claiming it the best salad of the summer.

Strawberry Pistachio Green Cabbage Salad
Ingredients
10 oz shredded green cabbage (I used a pre-shredded bag from Trader Joe's)
1 1/2 cup sliced strawberries, stems removed
1/3 cup feta cheese
1 large avocado, sliced or diced
1/3 cup raw pistachio nuts
3 tbs extra virgin olive oil
2 tbs rice wine vinegar
2 tbs red wine vinegar
salt and pepper to taste
Instructions
whisk the olive oil, rice vinegar, red wine vinegar and salt + pepper together in a small bowl.
place the cabbage, strawberries, avocado, feta and pistachios in a large salad bowl. drizzle the vinaigrette over the salad and toss together. serve immediately.
*add more or less dressing as desired. the first time i made this salad, i just winged it with the dressing--adding a little of each until it tasted good. feel free to do the same 🙂
