Hi guys! Sorry I’ve been a little MIA on the blog this last week! We’ve been traveling and visiting family for last 10 days, and I just decided I’d take time off and enjoy it! My boys have been having so much fun with cousins and family, we’re running them ragged! While we were in Denver last weekend, I whipped up these easy, Strawberry Greek Yogurt Cheesecake Cups and the kids just LOVED them. They’re the perfect, no bake treat for summer, made with just a few ingredients–
Vanilla Greek Yogurt (I like to use one with low sugar), cream cheese, strawberries, a little honey and our favorite Horizon Organic Cinnamon Snack Grahams (which my boys have also loved having to snack on during this never-ending road trip we’re currently on!) You can use the chocolate or honey flavored too, but we really like the extra layer of flavor the cinnamon grahams add!
After whipping together the greek yogurt and cream cheese, you just layer the filling in little cups with grahams on the bottom, a layer of strawberries in the middle, more filling, then strawberries and grahams on top! With a drizzle of honey. I’d recommend chilling the cups for 20-25 minutes before serving so they are nice and cold, but much longer than that and the grahams will start to soften (which you might like and if that’s the case, chill them as long as you’d like!)

Strawberry Greek Yogurt Cheesecake Cups
Yield 4 cups
Ingredients
8 oz cream cheese, room temperature
8 oz non-fat vanilla Greek yogurt
2 cups diced strawberries
1 box Horizon Organic Cinnamon Grahams
honey
4 clear plastic cups
Instructions
Place cream cheese in a large bowl and slowly add Greek yogurt to the it, beating until smooth and creamy.
Assemble cups (i like to use the clear, small plastic cups):
Place a few Horizon Cinnamon Snack Grahams in the bottom of each cup. Top with a layer of the cheesecake filling (about 1/4 cup), add a layer of diced strawberries, then top with another layer of cheesecake filling. Top with additional strawberries, Cinnamon Snack Grahams, and a drizzle of honey.
Chill for 20-25 minutes before serving!
Notes
* you can use smaller cups, or just do one layer to make more cups, but you may want to double the recipe if you want to serve more than 4!
