Everyone needs these White Chocolate Sprinkle Cookies in their life!
Happy Friday friends! I’m counting these White Chocolate Sprinkle Cookies as successfully celebrating St. Patty’s Day because I spy green sprinkles! But really, I just wanted to celebrate Friday + the weekend and do a little real talk with you. So cookies seemed necessary! Also, because I’m so obsessed with these. In a healthy kind of way.
This blog of mine has really changed over the eight years that I’ve been at this. What used to be mostly a food and dessert blog (emphasis on COOKIES) morphed into a food + family lifestyle blog (or at least I wanted it to be that). And over this last year I’ve found myself focusing on sharing easy, healthy recipes, fitness, with a little bit of life here and there. And I think I’ve found my happy spot. My presence is small, but I think it resonates with you guys….at least I hope it does? It seems so many of you are just trying to balance life, motherhood, work, or whatever responsibilities you have at this stage in your life….all while trying to take care of YOU too.
Healthy eating, exercise, self-care. I’m all about it. LOVE it! And I love if what I share here is helpful or inspiring to you too. But I also want to be real + transparent. So let it be known I love cookies. I crave cookies. I EAT cookies! Not as often as I once did (we were a cookies and ice cream every night of the weekend kind of couple a while back), but occasionally, we eat freaking cookies! Sometimes my kids like what I make for dinner, and a lot of days they don’t! So what I really hope to inspire is just finding the balance. In all of it.
So let’s mindfully eat a cookie or two tonight. And let’s sneak a bite of that dough.
Seriously, they’re so flipping good! They’re made with coconut oil, not butter. They’re thick and chewy and loaded with white chocolate chips and sprinkles. Seriously, what’s not to love???? White Chocolate Sprinkle Cookies
Yield 14
Ingredients
- 1/2 cup coconut oil (can also use butter)
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- pinch of salt
- 1/2 cup white chocolate chips
- 1/4 cup birthday sprinkles
Instructions
- Preheat oven to 350.
- In the bowl of a mixer, beat coconut oil and sugars together. Beat in egg and vanilla.
- In a separate bowl, mix flour, baking soda, cinnamon and salt together.
- Slow mix the dry ingredients into the wet ingredients.
- Gently fold the white chocolate chips and sprinkles into the batter.
- Scoop into one inch balls and place on a baking sheet lined with parchment paper.
- Bake for 8-9 minutes, remove and let cool for 2-3 minutes before transferring to a cooling rack.
