It’s always after the weekend, when Mondays roll around, that I re-dedicate myself to eating better. I always fall off the wagon on the weekend. No matter how determined I am I cave and indulge in cookies or late night popcorn with a bowl of chocolate chips. Those two = MAJOR WEAKNESS for me.
So Monday is here and I’m back on the wagon. This Cilantro-Lime Avocado Chicken Salad is guilt free but has lots of flavor. Perfect for a lighter lunch or dinner. We like to eat it plain, wrapped up in lettuce, or you can make a wrap or open faced sandwich with it.
Chicken, avocado, celery, and cilantro are tossed together in a simply dressing made of Greek yogurt, a tad bit of light mayo, lime juice and cumin. It’s just my kind of simple, healthy salad.
Serve it in the avocado shells for a fun presentation โโ ๐
Cilantro-Lime Avocado Chicken Salad
Yield 4
Ingredients
Ingredients
- 12 oz shredded chicken
- 1/2 of a large avocado, diced
- 1/4 cup celery, chopped
- 1/4 cup cilantro, chopped
- juice of 1/2 of a lime
- 1/2 cup nonfat Greek yogurt (more if desired)
- 1/4 tsp cumin
- salt and pepper to tasteย
Instructions
- Combine greek yogurt, lime juice, and cumin together in a small bowl.
- Combine chicken, avocado, celery, and cilantro together in a medium bowl. Pour dressing over chicken mixture and stir to combine. Season with salt and pepper to taste.
- Chill in air tight container or serve immediately.

Would the avocado turn black? Avocado usually turn black after cutting it and leaving it exposed for some time. FYI, I’m in Singapore and it is pretty humid here

Hi Julie, if you chill it for several hours before chilling it shouldn’t blacken. It’s a small salad too so isn’t one you’ll be refrigerating over night. If you want to wait and add the avocado just before serving that is fine too!

My husband and I drive semi and I’m always looking for easy and healthy ideas. I made this yesterday while we waited for a new load and it was super yummy. My hubs loved it as well. It’s a keeper.

Usually if you leave the seed with the avocado it won’t turn black. Also the lime juice helps to keep it from turning black.
I lose this recipe but instead of chicken I is chick peas. It is so yummy

Sounds awesome! I am definitely making this for lunch today but since it will be for me alone, (hubby eats a slice of pizza for lunch every single day of his life!) I will be adding the avocado right before serving. (PS: If have found that if you store the unused part of the avocado in an air-tight container with a few slices of onion it will last longer before blackening).

Ok, made it for lunch minus the avocado. I put it in a whole wheat tortilla, added some thinly sliced avocado and diced cherry tomatoes and it is DEEEEELICIOUS!!!! Only one problem…. I keep running back to the fridge and shoveling forkfuls into my face! ๐
