Happy Thanksgiving week! We’re on the road to Arizona for Thanksgiving and guess what??? We aren’t cooking tomorrow–we’re going out! I can’t tell you how relieved I am. The stress of traveling + cooking + cleaning + kids who don’t eat it anyway. SO happy to relax and spend the day with family and just show up for dinner!
Before pumpkin season is over I had to share these Pumpkin Angel Food Cake Bars again, with some updated photos! They require just three ingredients {not including the whipped cream or optional glaze, but they don’t count!}. One box of fat free angel food cake mix, one 15 ounce can of pumpkin, and some pumpkin pie spice. That’s it! Mix the three together and bake them in a 9 X 13 inch pan!
I decided to do something fun and make little Pumpkin Angel Food Cake + Banana Kebabs! What other fruit would go well with pumpkin? I couldn’t think of anything other than banana so went with it!
But these would be a fun, guilt free treat to bring to a party. You know, for your friends who appreciate lightened up options for dessert 🙂
Served with some fresh whipped cream these are dreamy little bites of heaven! I included the nutritional info below too!
3 Ingredient Pumpkin Angel Food Cake Bars
Ingredients
- 1 box fat free Angel Food Cake Mix
- 1 (16oz) canned pumpkin
- 1 tsp pumpkin pie spice
- Whipped Cream
- * 4 bananas, sliced into rounds if you want to make the kebabs
- * optional glaze
- 3/4 cup sifted powdered sugar
- 1 1/2 tbsp hot water
- 1 tsp vanilla extract
- 1/4 tsp pumpkin pie spice
Instructions
- Preheat oven to 350.
- Mix angel food cake mix, pumpkin, and 1 tsp pumpkin pie spice in a bowl. Pour into a greased 9 X 13 in cake pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.
- Cut into bars and serve with whipped cream.
- Cut into cubes if you want to make kebabs. Alternate sliced bananas and the pumpkin angel food cake cubes onto a wooden skewer.
- If you want to drizzel with a glaze:
- In another bowl, beat powdered sugar, hot water, vanilla and 1/4 tsp pumpkin pie spice together. Drizzle over the top of the cake and cut into squares.

These look really good. BTW, making an angel food cake from scratch is pretty easy, just be sure you get all the yolk into a separate container, but the bigger bonus is that you can control how much sugar goes into it.

I saw this on Pinterest and made them wiht my niece tonight! They were really good and she loved them too! If I figured it correctly they are 90 calories a piece(i cute them into 24 squares) and only 2 grams of fat in the whole pan!!!!! Thanks so much for the recipe!

What brand of Angel Food Cake mix do you use? I know it doesn’t matter in regards to the recipe, but I’d just like to know. Also, This sounds SO good! I have a disease that causes me to be fed by a feeding tube because my body cannot handle or process “regular” food, but typically I’m able to tolerate a small slice of Angel food cake here and there. I’ve been CRAVING pumpkin but I can no longer eat any of the typical pumpkin treats, I think this just might be my answer! I’m so excited to try it!

I followed this recipe exactly and they were terrible, I was so disappointed. I am a seasoned baker so I don’t know what went wrong. I even made cream cheese frosting to doctor them up, but no takers. Make these and sample them before you serve them to guests!

What size (in ozs.) Angel Food cake mix did you uae, Kristy? Peerhaps Angie’s cake didn’t turn out well because many cake mixes are now smaller than they previously were. I seriously doubt that Angie messed up a 3 ingredient cake! I wanted to ask this question before I went ahead and made this recipe. Pleaase respond, since I’s like to bring this cake to a Thanksgiving gathering.

Made this today at 5000 ft elevation and it turned out great! I did double the spice amount but other than that I made no modifications. Served with a dolop of whipped cream. Yum!
