Sunday mornings (oh who am I kidding, every morning in my book) are made for muffins! These Kodiak Cakes Mixed Berry Muffins were a huge hit earlier this week and were gone in less than 24 hours. So it only makes sense to make more. Today! And so should you 🙂
They’re made with Kodiak Cakes Power Cakes Mix, mixed frozen berries (or fresh), coconut oil, a little Greek yogurt + milk, an egg, and a little maple syrup! And a sprinkle of turbinado sugar on top.
I love using the Kodiak Cakes Protein Power Cakes Flapjack + Waffle mix in muffins! It’s made with whole grain wheat flour, whole grain oat flour, and packs extra protein (whey protein added)– keeping us all a little fuller, longer.
We’ve made Kodiak Cakes Banana Muffins Pumpkin Chocolate Chip Muffins, even Carrot Cake Muffins. But these ones might take the cake! Bursting with sweet berry goodness….

Kodiak Cakes Mixed Berry Muffins
Yield 12
Ingredients
- 2 cups Kodiak Cakes Power Cakes + Flapjack Mix
- 1/2 tsp baking soda
- 1 egg
- 2/3 cup milk
- 1/3 cup plain nonfat (or vanilla) Greek yogurt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 3 tbsp pure maple syrup
- 1/4 cup coconut oil, melted
- 1 cup mixed frozen berries
- Turbinado Sugar (for sprinkling on top)
Instructions
- Preheat oven to 350.
- Lightly grease or line a muffin tin.
- In a bowl mix Kodiak mix with baking soda and cinnamon.
- In a separate bowl whisk egg, milk, greek yogurt, and vanilla together.
- In another small bowl, melt maple syrup and coconut oil together in the microwave until melted.
- Add the milk mixture into the dry ingredients and stir together. Whisk in coconut oil and maple syrup.
- Lastly gently fold frozen berries in.
- Scoop batter into muffin tins about 3/4 full. Bake at 350 for 20 minutes.

Shoot I don’t typically track calories so don’t calculate for most of my recipes!
I made mine with unsweetened cashew milk (25 cal/cup) and nonfat Greek yogurt and they came out to 140 calories per muffin.
Made these last night and they came out great! Had to improvise as I don’t drink milk and was out of almond milk so I used 1/3 cup half and half plus 1//3 cup water in place of the milk. And I added extra fruit… in addition 1 cup blueberries, I added 1 frozen banana and approx 1/4 cup strawberries chopped up. Will make them again 😄
Used almond milk, plain Greek yogurt, frozen bluberries and almond extract( was out of vanilla). Added a bit of cinnamon as well. Very yummy! Saving these for breakfast for the week! Will make again. 🙂

What can I use in place of coconut oil?
Melted butter, avocado oil or vegetable oil!
I swapped out the coconut oil 1:1 with unsweetened apple sauce. They turned out great!
can you use olive oil instead of coconut oil?
I think any oil will work!
Do you happen to know if these would work with the gluten free Kodiak mix? I haven’t tried it before but it’s on my next shopping list!

I made these today. I did not have maple syrup so I used honey. They are delicious. I also used fresh blueberries and raspberries. I will have these at breakfast.

Vegan version, should this work with a flax egg and non-dairy milk and yogurt?
I think it would for sure work with the non-dairy milk and yogurt, not sure about the flax-egg (haven’t tried that!)
Wow! These were SO good. I am playing around with the kodiak mix because I am not a fan of the plain pancakes, this recipe takes it up to a whole new different level. My kids (18m and 4yr old) loved them. My husband said they could become a regular in the house. Thank you for sharing. 🙂

I made three changes-I used fresh blueberries (tossed in flour so they wouldn’t sink), I had to use butter bc I was out of coconut oil, & I made mini muffins. They turned out wonderfully. I made them for a quick snack for my 15 month old daughter. She loved them!

Two double-batches in one week! These muffins were a hit with my family and they freeze really well. I may attempt adding chocolate chips and skipping the berries the next time I bake these muffins (wish me luck). Thank you for the great recipe!
Yummy muffins. I don’t recommend liners because they were difficult to peel off. I calculated the nutrition using My Fitness Pal and the we 139 calories per muffin, 6 g fat, 6 G protein and 16 g carbs.
Can you substitute apple sauce for the oil?
How do these need to be stored? Mine smelled rancid afternjist 2 days out in a sealed Tupperware. I wasn’t sure if the whey requires refrigerating?
they shouldn’t need to be refrigerated!

Delicious! A few adjustment based on what I had in my pantry: used regular yogurt instead of Greek, used almond milk instead of regular milk, used avocado oil instead of coconut oil, and used fresh blueberries. Will definitely make these again! Thank you!
I have used this recipe 5 times now! The whole family is enjoying these muffins. I have switched out berries for chocolate chips once and apples another time, overall I think it’s best with either mixed berries or blueberries.

Delicious. I used fresh instead of frozen blueberries, regular instead of Greek yogurt and used olive oil instead of coconut. My kids gobbled it all up didn’t even know it was whole wheat or that I used Kodiak mix.
Delicious. A huge hit with the boys. Made a few substitutions plain yogurt, olive oil and fresh berries.
So, I had 1 to many glasses of wine, and misread 3tbs of syrup and put 3tsp. Instead of remaking them, I drizzled maple more syrup on each muffin before baking. Turned out pretty good.
I just made these the other day to eat with my coffee. I will say I love them and got the reaction from my wife like damn my man is baking!
